From School Garden to Cafeteria Table

Every cafeteria lunch program could use some healthy tips from an expert.  In this month’s webinar for the Growing School Gardens community on edWeb.net, presenter Matthew Doris, Food Service Director & Chef at Tuckahoe Common School District in Southampton, NY shared the benefits of having a school garden.  Matthew explained to attendees why it is important to have school gardens.  He discusses the numerous child health issues and provides a snapshot view of the American diet.  His knowledge as a chef lends to this presentation through his discussion on the concept of empty calories vs. nutrient dense foods.  His presentation included a tour of the Tuckahoe Garden and its features, including: raised beds, leaf usage, cold frames, square foot gardening, horizontal methods, composting/sustainability, informational cards, and more.  Matthew shared his garden plan and manual, which includes work hour log records and a maintenance schedule.  He also showed the cafeteria menu and how he uses garden produce in the lunch program.
